Five-Minute Apple Oatmeal

I love this warm breakfast treat. It’s great for the winter weather. And it’s vegan!

Easy as apple pie oatmeal:

  • 2/3 cup quick oats
  • 3 tbsp almond milk (you can use another type of milk if you like)
  • 2 tbsp maple syrup (or agave, or honey)
  • One apple of your choice–I prefer Macoun apples for their tart crunchiness–cut into cubes
  • A dash of nutmeg
  • A much larger dash of cinnamon

First, add the ingredients in the above order to a jar or bowl. Next, cover the jar or bowl with plastic wrap, and poke a hole in it (alternatively, cover it loosely with something else). Then pop the jar or bowl in the microwave for 4 and a half minutes. Check on the oatmeal half-way through and give it a stir so that it doesn’t boil over; if it looks a bit dry, add another splash of milk. Once it’s done heating, the apples will be soft and the oats should be soaked through. Give everything a quick stir before you dig in. Happy breakfast!
