This sundried tomato paste is creamy, savory, and easy to make. It’s great on salmon, eggs, toasted bread, and anything where spreadable cheeses are involved. Why buy it at the store when you can make it at home in a few minutes?
Get ready to blend this baby:
- 1/4 cup olive oil
- 2/3 cup dry sundried tomatoes (if you want to use a jar of the wet ones in olive oil, play with the quantities of olive oil and tomatoes given here)
- 3 tbsp tomato paste
- 5 cloves garlic
- 2 tsp salt
Blend all of the ingredients together until the paste is mostly smooth, with small pieces of sundried tomato still visible. Wasn’t that easy? This recipe makes about 1 cup of paste. I like it on pasta with soft goat cheese. Mmm…
